We are a well established European Bakery located in Seventeen Mile Rocks. We have been operating in Brisbane for sixteen years and specialize in serving our customers fresh breads, pastries and tarts.
These are full-time positions, working on a roster system, and we are open 7 days a week.
You will be working within a friendly team in our Bakery which is located in the Industriesl Estate of Seventeen Mile Rocks.

We are a large commercial bakery, supplying high quality cakes, pastries, cheesecakes and desserts to our own outlets in Graceville,Taringa & Fortitude Valley as well as Brisbane's best cafe's and coffee shops. Working in a clean, efficient and friendly environment, you will be required to bake cakes, slices, biscuits, friands and other gourmet varieties.

BAKER / PASTRY CHEF APPRENTICE (click for more info)
Bakers make bread, cakes and pastries, using flour and other ingredients.
Bakers may perform the following tasks:
- check that equipment meets health and safety regulations
- check the quality of raw materials and weigh ingredients
- mix dough by hand or machine, then place in tins or trays
- load tins or trays into ovens, keeping an eye on the oven temperatures and the appearance of the bread (or the cake or pastry)
- unload ovens when the bread is baked, take bread out of trays and put aside to cool
- glaze or decorate cakes and pastries with icing or cream
- order baking supplies from wholesalers
- operate slicing and wrapping machines
The increased use of machinery has reduced heavy work for bakers. However, they still have to stand a lot of the time. Most bakers work full time, and they often work late at night or early in the morning. They may also work on weekends and public holidays.
Personal Requirements:

Pastrycooks mix, bake, fill, ice and decorate all kinds of cakes and pastries.
Pastrycooks may perform the following tasks:
- weigh, mix or knead (manipulate with your hands), mature, mould and shape mixture before baking
- load and unload mixture into ovens using tins and trays
- operate and monitor baking equipment and temperature to control appearance of products
- glaze or decorate with icing or cream
- order baking supplies from wholesalers
- check and maintain the cleanliness of equipment and utensils to make sure health and safety regulations are met
- serve customers
- supervise and undertake on-the-job training of apprentices.
Pastrycooks may specialise as chocolatiers, patissiers, ice carvers, sculptors and festive cake decorators.
Pastrycooks stand most of the day. They may work broken shifts at night or on weekends and public holidays. Pastrycooks must be prepared to start work early in the morning. Conditions in the bakery are usually hot and humid.
Cake Decorator who decorate cakes and pastries of all shapes and sizes with coloured icings or pastry cream.

Our Production is located in Seventeen Mile Rocks and uses traditional scratch methods and plays a key role in ensuring the success of our organization.
Currently we have a position for a PRODUCTION MANAGER to join our team.
Ideally, this person will possess all aspects & qualification of modern Baking and Pastry Cooking.
The successful candidate will be able to work day shift generally commencing at 8.30 am and finishing at 5.00 am Monday night to Friday, however as the leading person you will be required to cover what is necessary to.
Duties and responsibilities:
• monitoring oven temperatures and bread appearance to determine baking times• unloading ovens and arranging de-panning and cooling of bread
• machinery operation and purchasing baking supplies
• baking of mixed dough¡¦s and batters
• frosting and decorating cakes or other baked goods
• ensuring quality of products meet established standards
• drawing up production schedule to determine type and quantity of goods to produce
• overseeing sales and merchandising of baked goods
• checking the cleanliness and operation of equipment and premises before production runs to ensure compliance with occupational health and safety regulations
• maintenance and cleaning of equipment
